origins
La Mejillonera was founded in 1981 by Don Enrique Escandel Vieira with a clear and bold vision: to offer high-quality, unadulterated products where authentic flavor always took center stage. From the very beginning, a commitment to excellence, personalized service, and honest cooking shaped the concept that would soon become a benchmark.
In 2006, a new and pivotal stage began with the arrival of Salvador Zaragoza Pérez and Josetxo Pajares García. Their two visions complemented and enriched the project: on the one hand, Salvador's experience, customer knowledge, and long-standing hospitality tradition, honed over years in Benidorm; on the other, Josetxo's innovative approach, which brought technique, evolution, and a contemporary understanding of cuisine. From this union emerged the perfect balance between respect for the essence of the business and the ability to reinvent itself.
